MARKET BASKET DINNER CLASS SERIES

The Saturday Market Basket Dinner Class Series is back this summer with Instructor Ingrid Berger. Each class will feature a unique four-course menu served with a tasting of wines from nearby Stone Mountain, Oakencroft, and White Hall Vineyards. The menu is finalized the day of the class utilizing the best of what our Charlottesville City Market has to offer. Celebrate summer, join us in supporting our City Market, and learn how to execute a locally inspired gourmet meal.

Berger finalizes the menu on the day of the class, creating dishes that utilize the best of what she finds at the Charlottesville City market that day. These classes, which are demonstration (with casual participation), are reminiscent of a Chef's Table atmosphere - 10 students sit and watch the menu constructed and served right in front of them. Berger creates dishes that are not overly complicated or time consuming to prepare, but celebrate simply the produce, meats and dairy from the Market.

A graduate of New England Culinary Institute with 15 years of experience from line cook to executive chef, Ingrid Berger has taught over 100 classes at The Seasonal Cook, and the Market Basket Dinner classes are her favorite. "The students who sign up for these classes, not knowing what the menu will be, are adventurous eaters," she says. "They are excited to be part of creating a locally inspired meal."

Past Market Basket Dinner menus have included dishes like Baby Lettuces with Nasturtium & Green Goddess Dressing; Marinated Chevre with Baked Garlic; Roasted Sweet Onion, Corn & Arugula with Blackberry Vinaigrette; and White Peach-Nectarine Crisp.

BEHIND-THE-SCENES AT THE MAIN STREET MARKET CLASS SERIES

This exciting new series will give you the opportunity to learn more about the foods you may already be enjoying from the Main Street Market. Where do they come from? How are they made? Who produces or harvests them? What makes them so much better - and better for you - than foods that come from far away? At the beginning of each class, you will visit with one of the Market vendors who will answer these and any other questions you may have about their products. While at Feast, you will enjoy a sampling of Virginia cheeses; at the Organic Butcher and Seafood @ West Main you will be given a demonstration of how their products are prepared for sale.

After visiting with the vendor, you will return to The Seasonal Cook where Instructor Marisa Catalano will prepare a series of simple dishes that allow the natural flavor and goodness of fresh, high quality ingredients to shine. Generous tastings of each dish will be served with a sampling of Virginia wines from Stone Mountain, Oakencroft and/or White Hall Vineyards. Each class will conclude with a dessert from Albemarle Baking Company. $55/class or $150/series of 3.

EAT FRESH, EAT LOCAL COOKING CLASS SERIES

In this new series, we will be highlighting produce from Horse & Buggy, a local Community-Supported Agriculture (CSA) farm subscription program that draws from over 100 small family farms. Owner Brett Wilson will be on hand to explain the farming methods used by these farmers and to answer your questions about the CSA. Each class will start with a sampling of cheeses from CaroMont Farm produced by Chef-Turned Cheesemaker Gail Hobbs-Page in southern Albemarle County (). $65/class.

Knife SkillsHands-On Knife Skills Workshop

HANDS ON!

Learn how to peel, slice, dice, mince, jullienne & chiffonade seasonal produce. Basic knife care is also covered. The class concludes with a light meal prepared with ingredients prepped by the students. STUDENTS ARE REQUIRED TO BRING A 3-1/2" PARING KNIFE AND AN 8-10" CHEF'S KNIFE. Come a half hour early if your knives need sharpening. Registered students receive a 10% discount on the purchase of knives and sharpeners.
